This study presents a multiphase porous media model to simulate the heat and mass transfer during convective drying of sweet potatoes. Developed in COMSOL Multiphysics, the model couples the Brinkman and Darcy laws to analyze the interaction between temperature, relative humidity, and pore pressure. Results reveal that the internal pressure gradient, driven by phase-change evaporation, acts as the pivotal driving force for moisture expulsion, surpassing traditional diffusion mechanisms. Validation using GAB/Henderson models demonstrates high predictive accuracy. This framework provides a robust tool for optimizing industrial drying parameters, enhancing energy efficiency, and ensuring the quality preservation of agricultural products.
